Nothing Bundt Cakes is skipping pumpkin spice this year. Its fall lineup centers on a new Galactic Brownie Cake, a new Apple Pie Cake, and the return of a cult favorite: the Biscoff Cookie Butter Cake. All three are rolling out at participating locations nationwide between now and early October, but two of them are only around for about two weeks each, so if you want one, you need to know the dates.
Galactic Brownie Cake
This is the one getting the buzz, and it’s easy to see why. Nothing Bundt Cakes is known for its cream cheese frosting, and this cake skips it entirely. Instead you get a fudgy, gooey chocolate cake topped with a brownie batter glaze and a scatter of candy-coated rainbow sprinkles, basically a bakery-sized version of a Cosmic Brownie.
It’s only available as an individual Bundtlet, and only from August 24 through September 6, 2026. Once that window closes, it’s gone.

Apple Pie Cake
The second new flavor is a warmly spiced Bundtlet layered with cinnamon apples and topped with a buttery brown sugar streusel. It’s the most straightforwardly “fall” item of the three, and it’s a limited Bundtlet-only release as well, available September 14 through 27, 2026.

Biscoff Cookie Butter Cake (It’s Back)
This one isn’t new, but it has a real following, which is why it’s back for a second run. It’s a spice cake with Biscoff cookie butter mixed into the batter and drizzled on top, plus real Biscoff cookies baked into the bottom and added as a garnish on top. Unlike the two new flavors, this one is available in all standard Bundt Cake sizes, not just the Bundtlet, and it sticks around longer, from August 17 through October 11, 2026.

All three flavors are available at participating Nothing Bundt Cakes locations, in-store, online, or through the app, while supplies last. Availability can vary by location, so if a specific flavor matters to you, it’s worth calling ahead rather than driving over and hoping.
