Ingredients
  

  • 1 lb ground turkey lean, 93% or higher
  • 2 tbsp olive oil
  • 1 can diced or crushed canned tomatoes (no sugar added)
  • 8 cups fresh spinach chopped
  • 1 cup yellow onion diced
  • 2 tsp garlic powder
  • 1 tsp smoked paprika optional
  • Salt and pepper to taste
  • 3-4 tbsp water or veggie broth to deglaze

Method
 

  1. Heat a nonstick skillet over medium heat. Add the ground turkey and oil. Cook, breaking it up with a spoon, until browned and nearly cooked through (about 5-7 minutes).
  2. Add the diced onion and cook for 2-3 minutes until softened.
  3. Stir in the canned tomatoes, garlic powder, smoked paprika (if using), salt, and pepper. Let it simmer for 2 minutes—the tomatoes will reduce slightly.
  4. Add the spinach and water or broth. Stir until the spinach wilts down (about 1-2 minutes), coating it in the turkey-tomato mix.
  5. Remove from heat and serve hot.
