- 1 tbsp olive oil for brushing
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1-2 chipotle peppers in adobo minced
- 1 tsp adobo sauce from the can
- 1 tsp lime juice
- 1/2 tsp garlic powder
- Pinch of salt
- 3 tbsp ketchup
- 6 tbsp mayonnaise
- 1/2 tsp garlic powder
- Salt to taste
Method
- Heat the oven to 420°F. Grease the baking dish with olive oil.
- In a large bowl, combine the beef, onion, bell pepper, parsley, 1/2 cup of the Monterey Jack, 1/2 cup of the cheddar, salt, garlic powder, onion powder, and paprika.
- Divide the mixture evenly among the tortillas. Press it into a thin, even layer with your fingers, going all the way to the edges.
