- Heat the oven to 420°F. Grease the baking dish with olive oil.
- In a large bowl, combine the beef, onion, bell pepper, parsley, 1/2 cup of the Monterey Jack, 1/2 cup of the cheddar, salt, garlic powder, onion powder, and paprika.
- Divide the mixture evenly among the tortillas. Press it into a thin, even layer with your fingers, going all the way to the edges.
- Roll each tortilla up tightly, then cut each roll into 2 1/2 inch sections.
- Stand the sections in the baking dish with the cut side facing up. Brush lightly with olive oil.
- Bake 25 to 30 minutes.
- Mix the remaining 1/4 cup Jack and 1/4 cup cheddar and sprinkle it over the top. Return to the oven until melted. For extra browning, broil 2 to 3 minutes, watching closely.
- For the chipotle ranch, whisk all the ingredients together in a small bowl. Chill for 15 minutes before serving.
- For the classic sauce, whisk the ketchup, mayo, garlic powder, and salt in a small bowl until smooth.
- Serve the roll ups warm with both sauces.
Notes
Shred the cheese from a block if you can. It melts smoother than pre-shredded.
